The short version, and the long one
We buy from Brio Coffeeworks across town in the South End. The house blend is a washed Colombian and a natural Ethiopian that pulls sweet and forgiving, which matters when a bar is doing three hundred drinks before ten.
There is a rotating single origin on the second grinder, and a batch brew that gets dumped and re-brewed every forty minutes whether it is empty or not. Oat, almond and whole milk are all the same price.

How it gets made
Four steps, in order, every day. Nothing here is a secret.

Beans land on Tuesday
Roasted across town on Monday, rested a day, and never used more than eighteen days off roast.

Dialled three times a day
The bar pulls a test shot at open, at 10 am and after the lunch rush, and adjusts the grind for humidity.

Milk steamed per drink
No pre-steamed pitchers sitting on the bar. Each drink gets its own, textured for the cup size.

Staying? You get a warm cup and a saucer. Going? Compostable, with a fifty cent discount for your own.

There is, and it is free. We ask that laptops move off the long table between 11:30 and 1 so people can eat.
A water-process decaf on the second grinder all day. Anything on the espresso menu can be made with it.
Get it on the shelf before you arrive
Order coffee & drinks ahead for pickup at any of the three cafés. Hot food takes eight to twelve minutes, drinks and pastry take three to six.
